Recipe: Grilled chicken salad with avocado and green sauce
Ingredients:
- Grilled chicken breast, sliced
- Lettuce
- Cherry tomatoes (halved)
- Cucumber, sliced
- Sweetcorn
- Avocado, sliced
- 1 tablespoon guacamole (or mashed avocado)
- Green sauce (you can use herb ranch or basil yogurt sauce)
Method:
1. First, wash the vegetables thoroughly (lettuce, tomatoes, and cucumber).
2. On your serving plate, arrange a layer of lettuce as the base.
3. Arrange the tomato, cucumber, and corn around the sides.
4. Place the grilled chicken slices in the center.
5. Add the avocado slices next to the chicken.
6. Spoon the guacamole on top of the lettuce or in any corner of the plate.
7. Drizzle the green sauce over the chicken and avocado.
8. If you like, sprinkle with a little black pepper or a squeeze of lemon juice for extra freshness.
Tip:
You can make the green sauce at home by blending yogurt, mint, basil, lemon juice, a bit of olive oil, and a pinch of salt and pepper.
